Low FODMAP Chicken Enchiladas

Serves 2

Ingredients: 

Sauce:
2tbs olive oil
2tbs Gluten Free plain flour
1tsp cumin
1tsp oregano
1/2tsp salt
2tbs tomato paste
2 cups chicken stock
1/4tsp cinnamon
1/4tsp chilli powder *optional*

Filling:
5oz cooked shredded chicken OR 7oz raw chicken cooked and shredded
1tbs Foddies Taco seasoning 
1tsp dried chives
½ cup lactose or dairy free sour cream
1/2 cup lactose free or dairy free cheese
*extra ½ cup cheese for topping
4 corn tortillas

 

Method:

Preheat oven to 375F
In a saucepan heat up olive oil then add in Gluten Free flour and spices. Cook for 1-2 mins
Next add in stock and tomato paste and bring to a boil
Simmer sauce for 5-10 mins until thickened
While the sauce is simmering, combine all the filling ingredients together in a bowl and mix well
Once sauce is cooked, spread approx. ¼ cup onto the base of an oven tray
Next, fill each tortilla with ¼ of the filling mixture
Roll up each tortilla and place it seam side down into oven tray
Once all tortillas are filled and rolled up in tray, pour remaining sauce over the top and sprinkle with more cheese (approx. ¼-1/2 cup).
Bake in oven for 20mins or until cheese is melted.
