Low FODMAP Creamy Cajun Salmon Pasta

Serves 2

Ingredients: 

1lbs Salmon
2 tbs Foddies Cajun seasoning 
7oz Pasta of choice
2tbs GF plain flour
1 cup LF milk
1 cup Chicken stock (or x1 Massel stock cube and 1 cup water)
2oz baby spinach
3.5oz broccoli florets
2tsp salt
½ cup Parmesan cheese
2tbs Garlic infused olive oil * optional* (sub for regular oil)

 

Method:

1.Cook pasta as per package instructions. Add broccoli to pasta while it is cooking for the last 2-3 minutes so that it can boil with the pasta. Drain together and put to one side
2.While the pasta is cooking, cook salmon in a pan for approx. 4- 6 mins each side or until cooked to your liking
3.In a medium sized pot, heat garlic oil or regular oil then add in flour and cook stirring continuously for 1-2 minutes
4.Next add in the stock and milk and cook until thickened stirring regularly
Once thickened, add in Cajun seasoning, spinach, pasta, broccoli and parmesan cheese. Stir until nicely coated in sauce
5.Finally break up the cooked salmon, add to the pot and gently stir
Serve with extra parmesan cheese
