Low FODMAP Chicken Fajita Tray Bake

Serves 4


1lbs chicken breast/tenderloin - cut into strips

1 red capsicum/bell pepper

1/2 green capsicum/bell pepper

2 tbsp Foddies taco seasoning

2 tbsp garlic oil

1 tbsp extra virgin olive oil

Fresh coriander for serving (optional)

Sour cream of yogurt for serving (optional)


Pre-heat oven to 365F.

Cut capsicum into strips and place on lined oven tray with chicken strips.

Coat the capsicum and chicken with garlic oil, olive oil and Foddies taco seasoning and mix to combine.

Cook in oven for 15-20mins until chicken is cooked through.

Serve with GF tortillas or rice and top with sour cream or yoghurt of choice, Foddies salsa and fresh coriander.
